Ingredients

Spice mix

1 Tbsp  Ground Coriander

1 Tbsp Ground Cumin

1 Dsp Smoked Paprika

1 Tsp Turmeric

1 Tsp Chilli powder (if not using fresh chilli)

1 Tsp Ground Black Pepper

1 Tbsp Soft Brown Sugar

Veg

1 Large Onion, Peeled, Sliced thinly

2 Cloves Garlic, Minced or pressed

1 Thumb of Ginger, Minced

 

2 Tbsp Oil to fry.

So this recipe is for a meaty one.  It gets its smoky / spicy flavour from the chorizo and the smoked paprika.  If you want to  make a veggie one, lose all the meat (yep – I did just say that) and use a meat substitute – the Quorn Meatballs would go well.  You can also use chicken.  Maybe bulk up on the veggies a bit more.

Step by Step Instructions

Step 1

Pre-heat an oven to 160°c.

Place spice mix in a large mixing and add pork. Toss until thoroughly coated.

Step 2

Heat oil in a cast iron casserole dish. Add pork and remaining spice mix to the oil and cook for 5 minutes.

Step 3

Add onions and cook until they soften slightly.

 

Step 4

Add garlic and ginger after a few minutes and cook them out.

Step 5

Cover the casserole with foil and then place the lid over the foil.

Step 6

Transfer to the oven and cook for 2 hours.

Serve with basmati rice and a vegetable curry or coconut curry sauce.
