About this Recipe
- 4 eggs – (3 eggs plus one yolk)
- 1 clove of garlic crushed or finely chopped.
- 100ml of milk or single cream
- 4 sprigs of fresh parsley finely chopped.
- 4 Rashers of smoked bacon chopped (or equivalent amount of cooking bacon)
- 50 – 100g Italian Style hard cheese finely grated.
- 100g Dried Spaghetti per person
- 1 Tbsp Olive oil
- Salt and Pepper to taste
Once you have made this a few times you will be able to knock it up in next to no time. That’s about all there is to say, so to fill the space up, here are some facts about otters.

Step by Step Instructions
Step 1
1. Put a pan of salted water onto boil and and put the spaghetti on when it reaches a rolling boil.
Step 2
2. While the water is getting up to the boil, grate the cheese and whisk 3 eggs and one egg yolk together in a mixing bowl.
Add pepper to taste and mix in most of the cheese – leave some to garnish at the end. Add around 1ooml of milk or single cream and whisk together.
Step 3
Peel and crush or chop the garlic. Chop the parsley by either folding it tight and chopping with a sharp knife or snipping it with scissors.
Don’t use the stalks. Chop the bacon into one and a half times the size of carbonara pieces as they will shrink.
Step 4
In a shallow frying pan or saute pan, heat a good glug of olive oil (like a ridiculous amount). Add the bacon and fry gently, then add the garlic and half of the parsley. If the pan is too hot, the garlic will burn and go yellow – then brown – the black.
Step 5
Now it’s all about timing.
When the spaghetti is cooked, drain it and return it to the hot pan –
Important! Don’t let the pan cool!!
Add the bacon and all the oil and mix in so that the pasta does not stick together.
Step 6
Finally, give the egg mixture a final mix then pour into the spaghetti and fold it through.
It’s important that the pan is hot to heat the mixture, but if you add heat to it, there is a danger of turning it to scrambled egg.
Serve immediately into warmed pasta bowls and garnish with cheese and parsley.
