This is a good one – once you get the hang of this, you can fairly much chuck anything in (including those Quorn meatballs that are lurking in the freezer.)

Ingredients
  • 250g (Half a bag) Penne pasta or spirals
  • 1 Onion – Sliced
  • 2 Peppers
  • 6 largish mushrooms quartered
  • 1 Stick celery (chopped)
  • 1 Tin Tomato Soup or bake sauce.
  • Tin of Chopped Tomatoes
  • 1 Tbsp Smoked Paprika
  • 1/2 tbsp salt
  • 3 tbsp Olive oil
  • 1 Bag grated mozzarella (or other mild cheese – won’t be as creamy though!) 
  • 1 Cup Sweetcorn (Frozen or tinned)
  • 1/2 Chorizo ring, skinned and sliced
  • 100g Cooking Bacon,  chopped
  • Some Salt and Pepper
  • Sheds of Oregano
  • 1 Tsp Sugar
So this recipe is for a meaty one.  It gets its smoky / spicy flavour from the chorizo and the smoked paprika.  If you want to  make a veggie one, lose all the meat (yep – I did just say that) and use a meat substitute – the Quorn Meatballs would go well.  You can also use chicken.  Maybe bulk up on the veggies a bit more.

Step by Step Instructions

Step 1

Cook the pasta in a pan of water.  Usual rules.  Bring the water to a rolling boil, salt so it tastes like ocean,  It should take around 10 mins, but don’t overcook it as it’s got to go in the oven and cook again.  Once it’s cooked, strain it, chuck it back in the pan and put a good glug of oil on it (olive or veg) and stir to stop it from sticking.  After it’s stood for a few minutes stir again as past luuuuurves to stick.

Step 2

So while the the pasta is cooking, find Blue Monday (Full length version) by New Order and start prepping the other bits.

1. Slice the onions.
2.  Chop one and a half peppers (slice the remaining half for the top.)
3. Chop the mushrooms and celery.
If using the meat, chop this.
4.  Drain tinned sweetcorn or put frozen into a mug.

Step 3

Put the fry pan on a medium heat and put approx 1 Tablespoon (Tbsp) of olive oil in pan once it is warm.

Add the chorizo (chore – ee – tho) and meat and fry.  Add the smoked paprika.  Then add the onions.  If it looks a bit dry, add a spot or two more of oil.

Add the peppers, celery, mushrooms and a good spoon of oregano. and fry off.

Step 4

Once the fry pan stuff is looking spot on, add the soup or bake sauce.  Add the tomatoes and sugar.  Add the sweetcorn too and heat through.

Step 5

When pasta is cooked, brain and add olive oil to stop it sticking.  Fold in mixture a bit at a time and place into a baking dish or tin.

Step 6

Put lashings of mozzarella cheese on top and add the pepper slices.  Sprinkle with oregano and drizzle a bit of olive oil on the top.

Bake at 180 degrees for around 30 -40 mins until deep brown.

Let it stand for a while and then portion with a sharp knife and serve.
